Zubrowka, aka Sweet Vernal Grass, aka Buffalo Grass, aka Anthoxanthum odoratum, is a stalky grass with dense roots. It grows in the forests of Poland where the local ruminants are reported to leave other foods in order to graze on it. As with most things that grow in Poland, it has ended up infusing vodka - much to my heart’s joy. Zubrowka, the name for the resulting spirit as well as the grass itself, tastes like Colorado smells.
